Sweet Potato Pie Recipe from The Pantagraph

Ingredients:

  • 4 Sweet Potatoes or Yams
  • 4 Eggs
  • 1/2 Cup of Butter
  • 1/2 Cup of Evaporated Milk
  • 1 1/2 Cups of White Sugar
  • 1/2 Cup of Brown Sugar
  • 1/2 Teaspoon of Nutmeg
  • 1 Teaspoon of Cinnamon
  • 1 Teaspoon of Vanilla

Directions:

  • Boil sweet potatoes
  • Cover and cook for 40-50 minutes
  • Remove potato skin
  • Lightly mash together
  • Combine 4 lightly whisked eggs in a bowl with sugar and mix well
  • Add brown sugar, cinnamon, and nutmeg and mix together
  • Add butter and evaporated milk to the batter and mix
  • Add vanilla
  • Add the sweet potato mash and mix
  • Pour into a pie crust
  • Bake for 60 minutes at 350º
  • Serve with whip cream on top!
