Pumpkin Pie Recipe from The Daily Notes

Ingredients:

  • 2 Cups of Canned Pumpkin Puree
  • 1 ⅛ Cups of Brown Sugar
  • 1 Teaspoon of Salt
  • 1 ½ Teaspoon of Ginger
  • 1 Teaspoon of Cinnamon
  • 3 Slightly Beaten Egg Yolks
  • 1 ½ Cups of Evaporated Milk (mixed with ½ Cup of Water)
  • 3 Stiffly-Beaten Egg Yolks

Directions:

  • Add pumpkin puree into mixing bowl
  • Add brown sugar
  • Add salt, ginger and cinnamon
  • Mix well
  • Add beaten egg yolks
  • Add evaporated milk (optional) or milk to mixture
  • Add frothy egg whites
  • Mix well with whisk
  • Pour mixture into the pie crust
  • Tap pie crust tin to release air bubbles
  • Place pie in oven
  • Bake for 45 minutes at 375º
