Ingredients:
- 1 Cup of Flour
- ¼ Cup of Sugar
- ½ Cup of Butter
- 2 Eggs
- 1 Cup of Sugar
- 2 Tablespoon Lemon Juice
- 2 Tablespoon Flour
- ½ Teaspoon of Baking Powder
- 1 Teaspoon of Lemon Rind
- 1 ½ Cups of Powdered Sugar
- 1 Teaspoon of Vanilla Extract
- 1 Tablespoon of Milk
- 2 Tablespoons of Soft Butte
Directions:
- Add flour, sugar and butter into medium-sized mixing bowl
- Mix well with a spatula
- Continue to mix with electric mixer (optional)
- Pour mixture into a square baking tin
- Bake at 350 degrees for 20 minutes
- In a separate bowl, add eggs, sugar and lemon juice
- Add flour, baking powder, and lemon rind
- Use electric mixer to combine ingredients
- Pour mixture onto top of the bars
- Bake again for 25 minutes at 350 degrees
- In another bowl add powdered sugar, vanilla extract, milk and butter
- Mix with electric blender to create an icing
- Spread on top of bars
